Cheese & Jalapeño Brisket Pot Pie Recipe
Ingredients
1 lb cooked, shredded brisket
2 jalapeños, finely chopped (remove seeds to reduce the heat)
1 medium onion, diced
2 garlic cloves, minced
1 cup shredded cheddar cheese
½ cup shredded Monterey Jack cheese
¼ cup all-purpose flour
1½ cups beef broth
½ cup heavy cream
½ tsp dried thyme
2 tsp salt
¼ tsp ground black pepper
2 pie crusts, store-bought or homemade
Directions
1. Preheat the Oven
Set your oven to 375°F (190°C) so it is fully heated when the pie is ready to bake.
2. Sauté the Base
In a skillet or Dutch oven, heat a tablespoon of oil, or use brisket drippings if available. Add the diced onion and minced garlic and cook for about 3 minutes, until softened and fragrant.
3. Add the Heat
Add the chopped jalapeños and cook for another 2 minutes. This helps release their flavor while slightly softening their texture.
4. Make the Roux
Sprinkle the flour over the onion, garlic, and jalapeño mixture. Stir continuously for about 1 minute to cook the flour and create the base for the creamy filling.
5. Create the Sauce
Slowly whisk in the beef broth and heavy cream, stirring continuously to prevent lumps. Allow the mixture to simmer gently, stirring often, until it thickens into a creamy sauce.
6. Mix in the Filling
Reduce the heat and add the shredded brisket, cheddar cheese, Monterey Jack cheese, thyme, salt, and black pepper. Stir until the cheese melts and everything is evenly combined and heated through.
Remove the mixture from the heat and allow it to cool slightly before assembling the pie.
The creamy brisket filling is ready—but the real magic happens when that rich, cheesy mixture meets a golden crust.
