- Preheat oven to 220°C (425°F).
- Prepare potatoes:
- Wash and dry them היט.
- Slice thin cuts across each potato (don’t cut all the way through).
- Season:
- Mix olive oil, garlic, rosemary, thyme, salt, and pepper.
- Brush or drizzle over the potatoes, making sure it gets into the slices.
- Bake:
- Place on a sheet pan with space between each potato.
- Roast for 45–50 minutes, until crispy outside and tender inside.
- Finish & serve:
- Let rest a few minutes.
- Garnish with parsley if desired.
