Instructions

Preheat oven to 350°F (175°C).
Grease an 8–9 inch round cake pan or line with parchment paper. -
Blend
Add eggs and sugar to the blender. Blend 1–2 minutes until pale and foamy.
Add milk, oil, and vanilla. Blend until smooth.
Add flour and baking powder. Blend just until combined (don’t overmix).
Optional: blend in citrus zest. -
Bake
Pour batter into prepared pan.
Bake for 25–30 minutes, or until a toothpick comes out clean. -
Cool & Serve
Let cool 10 minutes, then remove from pan.
Dust with powdered sugar and enjoy!
