Strawberry Orange Chia Seed Pudding is a bright, refreshing, and nutrient-dense breakfast or snack.
It combines the creamy texture of chia seeds with citrusy orange flavor and the natural sweetness of strawberries.
Perfect for meal prep, it thickens overnight into a satisfying pudding consistency.
Ingredients
1 ¼ cups orange juice (preferably 100% juice)
1 cup Greek yogurt (plain, coconut, or vanilla)
½ cup chia seeds
1 cup fresh strawberries, hulled and chopped or mashed
1 tablespoon maple syrup or honey (optional)
½ teaspoon vanilla extract (optional)
Instructions
In a large bowl or storage jar, mash the strawberries to release their juices.
Whisk in the orange juice, yogurt, vanilla extract, and sweetener (if using) until smooth.
Stir in the chia seeds thoroughly, making sure they are evenly distributed and fully submerged.
Let the mixture sit for 5–10 minutes, then stir again to prevent clumping.
Cover and refrigerate for at least 4 hours, preferably overnight.
Before serving, stir once more and add your favorite toppings if desired.
